摘要 FIELD: food industry. ^ SUBSTANCE: invention relates to technology for production of flour confectionary products. The method provides for preparation of formula components. Lemon balm is extracted with liquid nitrogen to separate according miscella. Dandelion roots are cut, dried them in microwave field at specified parameters of process, additionally dried by convective method, impregnated with separated miscella, and simultaneously pressure is increased. Pressure reduction down to atmospheric value with simultaneous freezing dandelion roots and their cryo-grinding in medium of released nitrogen to produce flour. Then one performs production of dough from first grade wheat flour, flour produced from dandelion roots using described technology, baker's compressed yeast, vegetable oil, sugar, salt and water, its fermentation, moulding in the form of sheets and baking. ^ EFFECT: method makes it possible to produce new waffle bread that have improved texture and coffee taste and flavour with no coffee added to the formula.
