A method to make butter with a filler provides for pasteurizing cream, deodorizing, cooling, ripening, whipping the cream, mechanical processing of a butter layer. According to the method, while carrying out mechanical processing of the butter layer a suspension of a linseed additive in an amount of 0.4-6.0 % of content thereof in the ready butter is added thereto directly. Said suspension is prepared by mixing a dry linseed powder with preliminary pasteurized water or with buttermilk, or with milk, or with cream in a ratio of 1:3-1:12, at a temperature of 20-40 °C with the following keeping at this temperature in the course of 10-30 min and cooling the prepared suspension up to the temperature of adding thereof into the butter layer. |
