摘要 PURPOSE: A producing method of fermented black-red ginseng using a fermenting enzyme, and fermented platycodon grandiflorum and fermented ginger using thereof are provided to reduce the time of a steaming process to obtain fermented ginseng. CONSTITUTION: A producing method of fermented black-red ginseng using a fermenting enzyme comprises the following steps: supplying a natural fermenting enzyme solution to fresh ginseng, and fermenting at 25~40deg C for 25~45hours(S21); ferment-steaming the ginseng at 70~85deg C for 170~200hours(S22); ferment-aging the ginseng at 50~70deg C for 70~100hours(S23); and low temperature aging the ginseng at 25~40deg C for 24~35hours(S24).
