<P>PROBLEM TO BE SOLVED: To provide a heat-processed potato which has a favorable color tone without discoloration such as blackening, realizes excellent appearance without losing shape, excellent palate feeling with non-watery, hot and flaky texture and excellent taste without offensive taste, and can maintain the excellent qualities over the long term. <P>SOLUTION: In a method for producing heat-processed potato, peeled potato or peeled and cut potato is vacuum-packed and is subjected to heating treatment at an elevated temperature after being soaked in an aqueous solution containing acetic acid, thereby obtaining the heat-processed potato. <P>COPYRIGHT: (C)2011,JPO&INPIT |
