PURPOSE: A vegetable salting method for kimchi using deep sea oxygen dissolved water is provided to improve the productivity and the storage property of vegetables. CONSTITUTION: A vegetable salting method for kimchi comprises the following steps: injecting ozone into deep seawater and applying the magnetic force to the deep seawater using a permanent magnet to oxidize and coagulate materials to be oxidized; filtering the coagulated materials, and applying the magnetic force and injecting ozone into the deep seawater; passing the deep seawater through an activated charcoal catalyst layer for filtering to obtain deep sea oxygen dissolved water; washing fresh vegetables (A); controlling the salinity of the deep sea oxygen dissolved water(B); and inserting the washed vegetables into a salting tank, and pouring the deep sea oxygen dissolved water(C) for offering minerals in the deep seawater to the vegetables. |
