A process for producing a liquid Koji having an enhanced enzymatic activity, the process comprising cultivating a white Koji mold and/or a black Koji mold in a liquid culture medium containing a grain having the surface entirely or partially covered with a rhytidome as a culture raw material and supplemented with a nitrogen source. |
