PURPOSE: A producing method of soy sauce preserved crabs using deep sea water is provided to reduce the salinity of the soy sauce preserved crabs by using the deep sea water. CONSTITUTION: A producing method of soy sauce preserved crabs using deep sea water comprises the following steps: mixing the deep sea water, soy sauce, sugar, onion, apple, garlic, red pepper seeds, ginger, lemon, refined rice wine, and spring onion; firstly heating the mixture at 80~100deg C; secondly heating the mixture at 50~70deg C; filtering the heated mixture using a sieve; storing the obtained mixed soy sauce at -1~5deg C; dipping fresh crabs in salty water for 10~30minutes; storing the crabs at -1~5deg C after washing; inserting the mixed soy sauce and the crabs into a jar containing jade; and aging the mixture at -1~5deg C for 48~96hours.
