PURPOSE: Liularia fischeri and Chinese cabbage kimchi using pickled ligularia fischeri slices and a producing method thereof are provided to offer the active ingredients of liularia fischeri to users. CONSTITUTION: A producing method of liularia fischeri and Chinese cabbage kimchi comprises the following steps: cutting Chinese cabbage and salting for 4~6hours(S100); washing the salted Chinese cabbage, and dehydrating(S200); spreading pickle sauce on aged liularia fischeri aged by a mixed seasoning solution for obtaining pickled ligularia fischeri slices(S300); mixing the pickled ligularia fischeri slices, radish slices, radish juice, fermented seafood, pear juice, and other ingredients to obtain kimchi stuffing(S400); low temperature aging the kimchi stuffing for 24~48hours at 2~8deg C(S500); mixing the kimchi stuffing with the salted Chinese cabbage(S600); and low temperature storing the kimchi at 0~6deg C after inserting into a storage container(S700). |
