PURPOSE: A producing method of an aged ginger extract is provided to secure the convenience of transporting, storing, and using the aged ginger extract. CONSTITUTION: A producing method of an aged ginger extract comprises the following steps: freezing peeled ginger at -20-25deg C; melting the frozen ginger using a hot-air dryer at 35-45deg C; aging the ginger at 38-45deg C for 65-78deg C: slicing the aged ginger to obtain ginger pulp, and aging the ginger pulp in an aging tank at 38-45deg C for 72-480hours; and extruding the aged ginger using an extruder.
