CONSTITUTION: A pre-cooling, crushing and vacuum packaging method for garlic comprises the step of drying garlic delivered from a low temperature storage house naturally for 24 hours, drying the naturally dried garlic at the fixed temperature of 38~40°C for 48 hours, peeling off the dried garlic and keeping the temperature of garlic at 30°C, pre-cooling the peeled garlic at a low temperature for 4 hours, crushing the pre-cooled and peeled garlic, putting the crushed garlic into an instantaneous high temperature steam container of above 100°C and removing gas generated while crushing garlic with high temperature steam, and adding natural spice of garlic to the crushed garlic and packing in a vacuum container.
