The method involves applying a brewing product with hot liquid and/or steam with preset brewing pressure, and varying the brewing pressure when brewing hot beverages in a controlled manner. The brewing pressure is varied by controlling pumping capacity of pumping devices arranged upstream to an inlet (7) of a brewing chamber (1). The hot beverages from the brewing chamber are omitted when exceeding a minimum discharge pressure. The minimum discharge pressure is increased after or ending a brewing process so that an outlet (9) of the brewing chamber.
