PURPOSE: Kimch, a producing method thereof, and a producing method of kimchi jam using thereof are provided to reduce the spicy taste and the unique flavor of the kimchi. CONSTITUTION: A producing method of kimchi jam comprises the following steps: salting Chinese cabbage for 18~24hours, and washing; mixing garlic, spring onion, ginger, red pepper powder, sesame seeds, perilla seeds, salt, sea tangle stock, radish juice, and a herb tea extract to obtain kimchi seasonings; spreading the kimchi seasonings on the salted Chinese cabbage, and aging the mixture for 2~3months; washing the aged kimchi, and dehydrating; crushing the dehydrated kimchi into 0.2~1.5cm using a crusher; melting fructose, starch syrup, white sugar, and pectin; inserting the crushed kimchi and pear puree into the molten fructose mixture, and heating at 70deg C; and stirring to homogenize the mixture. |
