PURPOSE: A producing method of pickled medical herbs using enzymes is provided to secure the excellent functionality of the pickled medical herbs using a medical herb enzyme solution and medical herb enzyme soy sauce. CONSTITUTION: A producing method of pickled medical herbs using enzymes comprises the following steps: selecting medical herbs; mixing 100g of medical herbs, 5~60g of Japanese apricot, 5~60g of perilla frutescens crispa, and 80~180g of sugar to obtain a mixture for a medical herb enzyme solution; inserting the mixture into a jar, and fermenting to obtain a fermentation product; filtering the fermentation product before inserting into a container, and aging the product to obtain the medical herb enzyme solution; mixing the medical herb enzyme solution with water, soy sauce, and the sugar to obtain a medical herb enzyme soy sauce solution; boiling the medical herb enzyme soy sauce solution, and aging to obtain medical herb enzyme soy sauce; mixing the soy sauce with fermented soybean paste, and salting the medical herbs with the soy sauce mixture; and aging the mixture.
