摘要 <p>The invention relates to a method for determining the composition of food products by using broadband dielectric spectroscopy. According to the invention, the method consists in determining the intrinsic electrical parameters of a food product, as the dielectric function of the material or as its specific conductivity, the electric properties being determined by using the broadband dielectric spectroscopy, the dielectric being the very product to be tested and, after correlating the dielectrical analysis with a witness chemical analysis, there is determined the authenticity and the quality of the product to be tested.</p>
