<P>PROBLEM TO BE SOLVED: To provide a method for safely preserving food for a long period by using together a method of packing an oxygen scavenger and adding an antibacterial agent to food. <P>SOLUTION: The method for preserving the food includes sealing food added with a protamine hydrolyzate into a packing material of oxygen barrier property together with an oxygen scavenger. A molecular weight obtained by hydrolysing protamine is preferably 500-4,000. For the antibacterial agent to be added to the food, besides the protamine hydrolyzate, a pharmaceutical preparation obtained by combining at least one kind selected from the substance group consisting of sodium acetate, sodium polyphosphate, glycine, lysozyme and protamine may be used. <P>COPYRIGHT: (C)2011,JPO&INPIT |
