PROBLEM TO BE SOLVED: To provide a manual cutter member for a noodle-making machine which is capable of precisely cutting extruded noodle strips, has simple structure, and enables the thickness of the noodle strip to be changed easily. SOLUTION: The manual cutter member for the noodle-making machine has a structure at least equipped with a rectangular plate material 1 having many extruding holes 2 bored at the center and arranged so as to be settled in the inside of a container part 7, and attachable or detachable to or from the lower face of the container part 7, standing pieces 3 formed at both longitudinal ends of the plate material 1, and extended downward, a cutter 6 horizontally slidable between the standing pieces 3, and stopper parts 4 for the cutter, provided on the inside of each of the standing pieces 3 so that the cutter 6 may be fixedly held.
