There has been required a proofed frozen bread dough which can be baked to give a bread having good appearance, good texture and good taste, and can be stored and transported in a minimized space, thereby contributing to the reduction of distribution cost. Disclosed is a method for producing a proofed frozen bread dough, comprising: a mixing/kneading step for mixing mineral water from a hydrogencarbonate spring with bread dough materials and kneading the obtained mixture to give a bread dough; a shaping step for shaping the bread dough obtained in the mixing/kneading step into a definite shape to give a shaped bread dough; a film-forming step for forming a protein film or a fat film on the surface of the shaped bread dough obtained in the shaping step to thereby coat the surface of the shaped bread dough; a proofing step for proofing the shaped bread dough having been surface-coated in the film-forming step; and a freezing step for freezing the proofed bread dough obtained in the proofing step. It is preferred that, in the shaping step, the dough is shaped to give a shaped bread dough (2) having a thickness (T1) of 5 mm to 10 mm inclusive. |
