PURPOSE: Dumplings including squid dumpling skin, and a producing method thereof are provided to use squid as the skin or stuffing of the dumplings for improving the nutrition. CONSTITUTION: A producing method of dumplings including squid dumpling skin comprises the following steps: firstly freezing squid flesh and cutting the firstly frozen squid flesh; steaming the cut squid flesh, and secondly freezing the steamed squid flesh; drying the secondly steamed squid flesh, and crushing; mixing 100parts of flour by weight, 4~20parts of squid flesh powder by weight, 1~10parts of brown rice oil, 0.5~5parts of starch by weight, and 2~10parts of gluten by weight(S10); adding deep seawater into the mixture to obtain the dumpling skin; and inserting stuffing into the dumpling skin for molding the dumplings(S20).
