摘要 PURPOSE: A red ginseng extract filling for walnut cake, and a producing method thereof are provided to offer the functionality of red ginseng to the walnut cake by adding a red ginseng extract to a red bean paste filling. CONSTITUTION: A producing method of a red ginseng extract filling for walnut cake comprises the following: producing a red bean paste filling(S10); preparing a red ginseng extract(S20); mixing the red bean paste filling and the red ginseng extract in a ratio of 97:3(S30); and heating the mixture for 30minutes at 95deg C(S40). The red ginseng extract is obtained by low temperature extracting red ginseng at 60~65deg C using 70% alcohol.
