摘要 PURPOSE: A kimchi fraction and a producing method thereof are provided to obtain water soluble fibers, water soluble protein, oil soluble substances, and water soluble substances in cabbage kimchi in a fraction form. CONSTITUTION: A producing method of a kimchi fraction comprises the following steps: extracting cabbage kimchi with a solvent, and filtering at room temperature for 6~48hours to obtain a kimchi extract and a kimchi residue; extracting the kimchi extract for precipitating alcohol-insoluble components, and filtering to separate filtrate and the alcohol-insoluble components; drying the alcohol-insoluble components to obtain a first kimchi fraction; absorbing the filtrate on a carrier, and heating with an organic solvent for extracting the filtrate and separating the residues; and compress-concentrating the filtrate to obtain a second kimchi fraction.
