PURPOSE: Functional black garlic fermented soybean and a producing method thereof are provided to improve the content of useful bioactive substances of black garlic meals by fermenting the black garlic meals with soybeans. CONSTITUTION: A producing method of functional black garlic fermented soybean comprises the following steps: washing and steaming soybeans; cooling the soybeans at 45~55deg C, and inserting 20~30% of black garlic meals for the total weight of the fresh soybeans; injecting bacillus subtilis into the mixture, and firstly fermenting for 10~16hours at 30~40deg C; secondly adding the black garlic meals, and secondly fermenting for 30~40hours at 30~40deg C; aging the fermented product for 1~3days; drying the aged product, and pulverizing; and removing foreign materials contained in the black garlic meals using a sieve.
