摘要 PURPOSE: A producing method of braised chestnut inner bark, and the braised chestnut inner bark are provided to secure the unique savory taste and flavor of chestnut inner bark, and to offer functional components of the chestnut inner bark. CONSTITUTION: A producing method of braised chestnut inner bark comprises the following steps: soaking chestnut in water, and peeling outer bark only(A); boiling the chestnut with inner bark, and baking soda with water; removing first fuzz from the boiled chestnut by washing the chestnut with cold water; removing cores from the chestnut; repeating the boiling and the washing with the cold water processes for 4~5times for removing second fuzz(B); inserting the chestnut and cinnamon branches into syrup containing the water and sugar, and boiling; evaporating steam generated from the boiling process; and aging the chestnut boiled in the syrup for 1day(C). The syrup additionally contains vanilla beans.
