PURPOSE: A method for manufacturing vinegar containing amino acids of high content is provided to quickly complete whole process. CONSTITUTION: A method for manufacturing vinegar containing amino acids of high content comprises: a step of inoculating yeast to an aqueous medium containing tomato concentrate and fermenting to obtain alcohol fermentation; a step of adding an aqueous solvent to the alcohol fermentation and inoculating acetobacter; a step of performing surface fermentation at 35-40°C for 3-10 days; and a step of performing deep part fermentation of a solution. The amino acid is aspartic acid, glutamic acid, serine, alanine, or phenylalanine. |
