PROBLEM TO BE SOLVED: To provide a sheet processing device accurately aligning rear ends of sheets, an image forming device, and a sheet processing method. SOLUTION: The sheet processing device 100, which is a device that performs a predetermined output processing for a conveyed sheet, includes: an end aligning means having a surface with which an end of a sheet loaded on a processing tray is in contact and a surface which presses the end of the sheet; a rear end height detecting means for detecting the height of a rear end of the sheet; a driving means for driving the end aligning means; and a controlling means 101 for controlling the driving means based on detection information detected by the rear end height detecting means and determination information in a direction of curling generated on the rear end of the sheet determined from the detection information. The controlling means 101 controls the driving means in accordance with the height of the detected rear end of the sheet and the determined direction of curling. The end aligning means is moved vertically relative to a sheet loading surface of the processing tray, so that the height between the sheet loading surface and the surface that presses the rear end of the sheet is variably controlled.
