The invention comprises the N-penta-acetic acids of N - b - aminoethyl - 1 : 2 - diaminocycloalkanes, particularly the cyclopentane and cyclohexane derivatives, and water soluble monovalent cation salts and polyvalent metal chelates thereof. Such compounds are prepared by reacting the said triaminocycloalkanes with compounds such as monohalogen (e.g. chloro- or bromo-) acetic acids, their salts, esters, amides and nitriles, glycolic acid nitrile, or formaldehyde with alkali or hydrogen cyanide; where appropriate, the reaction product is hydrolysed. In the case of cyanomethylation, such hydrolysis may be effected simultaneously or subsequently. The penta-acid itself may be isolated from the pentasodium salt solution by a combination of acidification (HC1), ion-exchange and Pb salt/H2S methods. Many metals which may be chelated are mentioned, but Ca, Fe11 and Fe111 are exemplified. The N-b -aminoethyl-1:2-diaminocycloalkanes required are obtained by reacting 2-aminocycloalkane sulphuric acid with ethylenediamine (exemplified), or cycloalkane-1:2-diamine with ethyleneimine or with 2-aminoethyl chloride.ALSO:Ascorbic acid in fruit juices is stabilized by N-penta-acetic acids of N-(b -amino-ethyl)-1:2-diaminocycloalkanes (e.g. cyclopentanes or cyclohexanes) and water-soluble salts thereof such as the sodium salts.
