PURPOSE: A processing method of abalone slices, and the abalone slices are provided to store the abalone slices at room temperature for a long time, and to secure the excellent nutrition of the abalone slices. CONSTITUTION: A processing method of abalone slices comprises the following steps: grinding abalone and surimi; adding seasonings to the ground abalone and surimi, and kneading; aging the obtained mixture, and molding the aged mixture; drying the molded product; thinly re-molding the dried product using a noodle making machine; slicing the obtained abalone mixture, and steaming; cooling the steamed abalone slices, and adding spices; and drying the abalone slices before packing.
