PURPOSE: A producing method of pickled vegetables is provided to mix fresh vegetables with medical herbs and seasonings before aging the mixture to obtain the pickled vegetables. CONSTITUTION: A producing method of pickled vegetables comprises a step of mixing fresh vegetables with medical herb extract and seasonings, and aging the mixture for 30days at 10~20deg C. The fresh vegetables includes 20~50kg of pleurotus eryngii, 20~50kg of Chinese radish, 20~50kg of codonopsis lanceolata, 20~50kg of zanthoxylum piperitum, 20~50kg of green laver, 20~50kg of soybean leaves, 20~50kg of ganoderma lucidum, 20~50kg of wild rose shoots, and 20~50kg of miniature onion.
