A bacteria-free enzyme composition suitable for use in the ante-mortem treatment of meat-bearing animals comprises a proteolytic enzyme in aqueous solution, the solution having an activity of 250-14,000 tyrosyl units per milliliter, a ratio of tyrosyl units to milk-clotting units of 55-100 and a ratio of tyrosyl units to available milk-clotting units of more than 200. Preferred enzymes are plant-derived enzymes such as papain, ficin and bromelin. The Specification describes methods of determining milk clotting and tyrosyl values.
