<P>PROBLEM TO BE SOLVED: To provide a seasoning having a favorable flavor original to soup immediately after extraction from dried and fermented fish and continues its flavor and a method for producing the same. <P>SOLUTION: The seasoning contains ≥2.5 wt.% of fat-soluble components extracted from dried and fermented fish and has a content of triglyceride in the entire fat-soluble components of ≤15 wt.% and a content of free-fatty acid in the entire fat-soluble components of ≤5 wt.%. <P>COPYRIGHT: (C)2011,JPO&INPIT |
