<P>PROBLEM TO BE SOLVED: To provide a process for producing a polysaccharide suitable for long-term preservation which can inhibit the hydrolysis of the polysaccharide. <P>SOLUTION: The process for producing a polysaccharide comprises a step (1) of cultivating a polysaccharide producing microorganism to produce a polysaccharide and a step (2) of heat-treating the culture and the gas phase portion of the culture tank, respectively, after completion of cultivation. According to this process, the hydrolysis of the saccharide can be inhibited by simultaneously heat-treating the culture and the gas phase portion within the culture tank and a saccharide suitable for long-term preservation can be produced. <P>COPYRIGHT: (C)2011,JPO&INPIT |
