<P>PROBLEM TO BE SOLVED: To provide a method for producing cacao pudding excellent in bacterium preservability, and to provide pudding produced by the method. <P>SOLUTION: The method for producing the cacao pudding includes a cacao liquid preparing step of preparing a cacao liquid by mixing a liquid containing a first emulsifier of HLB of 9-16 with a cacao component comprising chocolate and cocoa and having the content of the chocolate of 50-99 mass%, a cacao emulsified liquid preparing step of preparing a cacao emulsified liquid by mixing the cacao liquid with a second emulsifier of HLB of 4-7, a raw material liquid preparing step of preparing a raw material liquid by mixing the cacao emulsified liquid with a gelling agent-containing component, and a sterilization step of sterilizing the raw material liquid.
