PROBLEM TO BE SOLVED: To provide a novel chitin oligosaccharide derivative and a novel N-acetyllactosamine derivative which have a modified structure of the reducing terminal sugar, and a process for producing both. SOLUTION: By heating an aqueous solution including chitin oligosaccharide and/or N-acetyllactosamine, a derivative having a double bond between positions 2 and 3 of a reducing terminal sugar is obtained. By further allowing active carbon and/or palladium carbon to act on the derivative thus obtained, a derivative having a double bond between positions 2 and 3 of the reducing terminal sugar and a keto group at position 1 of the reducing terminal sugar is obtained. In heating the aqueous solution, the aqueous solution preferably contains a boric acid ion. Further, in heating the aqueous solution, the pH of the aqueous solution is preferably 3-8.
