<p><P>PROBLEM TO BE SOLVED: To provide a frozen Gyuhi (steamed rice flour mixed with sugar and starch syrup) block having significantly excellent freezing and thawing resistance compared with conventional Gyuhi block to be used as dough for producing a rice cake-like food and a method for producing a desired amount of such Gyuhi block at a low cost. <P>SOLUTION: There are provided the Gyuhi block containing gelatinized starch, sucrose,α,α-trehalose and maltose and/orα-maltosylα,α-trehalose, wherein the block contains 150-400 pts.mass of sugars based on 100 pts.mass of the starch and contains 30-250 pts.mass of sucrose, 45-200 pts.mass ofα,α-trehalose, and 45-250 pts.mass of maltose and/or 10-250 pts.mass ofα-maltosylα,α-trehalose as sugars, and the method for producing the Gyuhi block. <P>COPYRIGHT: (C)2011,JPO&INPIT</p> |
