<P>PROBLEM TO BE SOLVED: To provide a method for efficiently producing durum whole-wheat flour excellent in processing suitability when using for pasta in spite of being whole-grain, and having excellent quality which enables remarkable improvement of appearance, tone of color, flavor and palate feeling of whole-grain pasta. <P>SOLUTION: This method for producing the durum whole-wheat flour comprises processes as follows: (1) a process of hydrating and refining selected durum wheat flour grains; (2) a process of dividing and collecting a fraction having ≥1.0 mass% or ≥1.2 mass% of ash and a fraction having <1.0 mass% or <1.2 mass% of ash; (3) a process of subjecting the fraction having ≥1.0 mass% or ≥1.2 mass% of ash obtained in the process (2) to wet treatment; (4) a process of supplying the fraction subjected to wet treatment in the process (3) to impact pulverizing to pulverize; (5) a process of dividing a fine powder fraction of an average particle diameter of <150 μm or <200 μm from the pulverized product obtained in the process (4); and (6) a process of mixing the fine powder fraction obtained in the process (5) with the fraction obtained in the process (2). <P>COPYRIGHT: (C)2007,JPO&INPIT |
