The cutter has a longitudinal cutting knife (15) cooperated with a positioning unit comprising two receiving crossheads (18) and actuating cams (19) permitting elastically mounted on both sides of a chassis between working and retracted positions. A set of equidistant triangular blades (17) is protruded at an upper surface of the chassis in a manner to cut vegetables into strips or cubes. The blades are retracted into a passage slit for passage of cut vegetables, where translation of a trolley during return phases automatically drives displacement of the knife in the retracted position.
