PURPOSE: A producing method of a sweet rice beverage using tricholoma matsutake is provided to offer the effect of the tricholoma matsutake by mixing the tricholoma matsutake with raw materials of the sweet rice beverage. CONSTITUTION: A producing method of a sweet rice beverage using tricholoma matsutake comprises the following steps: sieving 800~1,200g of malt powder, and dipping the malt powder into 1,000~1,500g of cold water before sieving with a 100meshes sieve to obtain malt water; soaking glutinous rice for 24hours, and steaming to obtain hard boiled rice; adding the tricholoma matsutake on the obtain hard boiled rice; removing the tricholoma matsutake from the rice, and inserting the malt water before keeping the temperature of 60deg C for 5~6hours; boiling the mixture for 3~7minutes to obtain sweet rice liquid; separating rice floating at the upper side of the sweet rice liquid, and dipping into the cold water; boiling the sweet rice liquid with sugar; cooling the sweet rice liquid and adding tricholoma matsutake liquid obtained by grinding the tricholoma matsutake with the sweet rice liquid; and adding the rice back into the mixture.
