摘要 FIELD: food industry. ^ SUBSTANCE: inventions group relates to food industry. The proposed methods of diabetic waffles production envisage recipe components preparation. Dandelion roots are cut, dried in microwave field at preset process parametres, additionally dried by convective method and cryo-ground in liquid nitrogen to produce flour. Dough is made from high-grade wheat flour, dandelion roots flour produced according to specified technology, yolks, salt, soda, vegetable oil, phospholipids and water. Then dough is shaped in the form of sheets and baked. Filling is prepared as follows: cinnamon is extracted with liquid nitrogen to separate corresponding miscella; girasol or girasol-sunflower or yacon or chicory or scorzonera or oyster plant or dandelion roots are cut. It is dried in microwave field at preset process parametres. It is fried, impregnated by separated miscella with simultaneous pressure boost and then pressure is released until it equals the atmospheric pressure simultaneously freezing the raw material and cryomilling it in the medium of evolved nitrogen to produce flour. Then flour is mixed with culinary fat, sugar substitute "Sladex" and waffle crumb to make filling.
