FIELD: food industry. ^ SUBSTANCE: present invention relates to a coffee composition, in particular, to a composition of instant coffee. The coffee composition contains coffee, a foaming agent, a protein source and kappa-carrageenan or iota-carrageenan or their mixture in an amount of at least 1.3 (weight) % of the composition total weight.
