PURPOSE: A fermented fish processing apparatus is provided to reduce personnel costs and to improve productivity by performing skin cutting on both sides of a fish. CONSTITUTION: A fermented fish processing apparatus comprises: a transport unit(20) which is installed in a main frame and transfers a fish while holding the fish upright; a skin cutting unit(10) which cuts the skin of the body of the fish from both sides using a pair of knives; a head fixing unit(30) which pulls the head of the fish; a tail fixing unit(40) which is installed in the rear upper part of the skin cutting unit and holds the tail of the fish; a plurality of sensors sensing the entry and exit of the fish; and a controller which controls devices by using the signal of a sensor.
