PURPOSE: A polyphenol concentrate and a preparing method thereof are provided to prevent bad small in a food and drink waste dump site. CONSTITUTION: A preparing method of polyphenol concentrate comprises: a pulverizing step of pulverizing tangerine processing by-products while adding water to the tangerine processing by-products; a neutralizing agent injecting step of injecting a neutralizing agent into liquid crushed material; a cohesive agent injecting step of injecting a cohesive agent into the liquid crushed material; a dehydration step of manufacturing dehydrated sludge; a pressing and dehydrating step of manufacturing liquid dehydrating liquid; and a filtration step of manufacturing concentrate containing polyphenol.
