摘要 <p>Alfa-1,4-glucan phosphorylases (GPs) catalyse the reversible breaking of α-1,4 bonds of the non-reducing extremities of homopolysaccharides having at least 5 molecules of glucose such as starch, maltodextrins and glycogen, leading to production of glucose-1-phosphate. GPs in bacteria and animal cells are responsible for glycogen degradation. Although increase in GP activity entails reduction in intracellular levels of glycogen in bacteria and animal cells in this invention the obtainment is described of plants having high starch levels and yields together with a high amylose/amylopectin balance as a consequence of the expression of genes coding for GPs.</p>
