HIGHLY FUNCTIONAL FLATFISH AND PROCESSED PRODUCT OF THE SAME

PROBLEM TO BE SOLVED: To provide a highly functional flatfish rich in amino acid and unsaturated fatty acid and having high antioxidative activity, and to provide a high-quality fishery product and a high-quality processed marine product which are efficiently produced.

SOLUTION: The highly functional flatfish is cultured by orally and continuously feeding high-temperature-fermented feed using a thermophilic microbial colony by an aquaculture technique utilizing the high-temperature-fermented feed using thermophile. The highly functional flatfish comprising the cultured flatfish has an amount of free amino acid of ≥350 mg in summer based on 100 g of the flesh of the flatfish, is increased in the ratio of unsaturated fatty acid such as oleic acid, and has a high antioxidative activity. The processed product is produced by using the flesh of the cultured flatfish.
