PURPOSE: Salted mackerel using a black garlic extract and a schisandra chinensis extract, and a producing method thereof are provided to remove the unique fishy smell from fresh mackerel, and to improve the flavor of the mackerel. CONSTITUTION: A producing method of salted mackerel using a black garlic extract and a schisandra chinensis extract comprises the following steps: pre-drying the washed and dressed fresh mackerel(S100); dipping the fresh mackerel into a dipping solution containing the black garlic extract, the schisandra chinensis extract, and lemon juice(S110); removing moisture from the mackerel(S120); and salting the fresh mackerel with bay salt(S130). The dipping process is performed for 1~3days at 0.1~2deg C. |
