PROBLEM TO BE SOLVED: To provide a mixer capable of homogeneously mixing water with grain flour such as wheat flour, rice flour or buckwheat flour in short time without forming undissolved lumps of flour. SOLUTION: An agitating blade is provided with: a plate-like horizontal member 1 connected vertically relative to the axial direction of a shaft; a projection 3 vertically provided on the shaft side of the horizontal member 1; and a plate-like inclined member 2 connected integratedly to a tip of the horizontal member, having a given inclination and extended upward, wherein each of the width direction of the horizontal member 1 and the inclined member 2 is imparted with an angle of 30-60°with respect to the axis of the shaft, and the height of the inclined member 2 is set at 100-300% of the length of the horizontal member 1. By using the mixer including the agitating blade of such a structure, a homogeneously mixed state is accomplished in short time without forming undissolved lumps of flour of wheat, rice or buckwheat.
