<P>PROBLEM TO BE SOLVED: To provide a syneresis-inhibiting effect on food by a molokheiya leaf-derived polysaccharide enabling production of thickening polysaccharide having an excellent syneresis-inhibiting effect on food (particularly on frozen food). <P>SOLUTION: The syneresis-inhibiting method comprises addition of the molokheiya leaf-derived polysaccharide to food.
