PROBLEM TO BE SOLVED: To provide a method of leveling and flat-sewing a tatami mat capable of making the edge width of the tatami mat constant as set beforehand when flat-sewing the tatami mat while leveling. SOLUTION: This method of leveling and flat-sewing a tatami mat uses a tatami mat flat-sewing device including a flat-sewing machine device which is movable in the lateral direction of the tatami mat to be flat-sewed and flat-sews the tatami mat while leveling, a tatami mat cutting device having a cutting tool the edge of which has an interval s in the longitudinal direction of the tatami mat from the sewing needle of the flat-sewing machining device, and a means for moving the tatami mat cutting device in the lateral direction of the tatami mat relative to the flat-sewing machine device. When the flat-sewing is started, the edge of the cutting tool is set at a position apart a length r=k (s/L) (where k: deviation of permanent deformations at adjacent measurement points, L: length from a stile to a portion where the permanent deformations are measured) in the lateral direction of the tatami mat from a front lower reference line, and the flat sewing is performed along a predicted flat-sewing line having an inclination (k/L).
