PREPARATION METHOD OF GINSENG AND RED GINSENG CONCENTRATE CONTAINING THE INCREASED AMOUNT OF COMPOUND K BY USING PECTINEX

PURPOSE: A ginseng and red ginseng extract, and a producing method thereof are provided to increase the content of compound K by enzyme-fermenting the ginseng using a polysaccharide decomposition enzyme. CONSTITUTION: A producing method of a ginseng and red ginseng extract comprises the following steps: inserting 60~70% alcohol to ginseng, red ginseng, or ginseng roots, for extracting at 70~80deg C; cooling and filtering the extracting, and concentrating the filtrate; reacting the concentrate with pectinex for transforming ginseng saponin into compound K; inactivating the pectinex; and condensing the concentrate.
