<P>PROBLEM TO BE SOLVED: To establish a method for manufacturing cereal noodle which is excellent in a palate feeling by adding a taste and flavor by using cereal alcohol to a taste originated from cereals. <P>SOLUTION: This method for manufacturing cereal noodle which is excellent in a taste and palate feeling is characterized to use cereal noodle obtained by blending single or multiple cereals and beans such as barley, millet, foxtail millet, black rice, and black beans for manufacturing cereal alcohol materials fermented by adding malted rice and water to cereal powder obtained by crushing such cereals, and to blend and knead the cereal alcohol materials with wheat flour or the like, and to cut it into a prescribed thickness to manufacture noodle. <P>COPYRIGHT: (C)2011,JPO&INPIT |
