METHOD OF PRODUCING DRIED POWDER USING NEMACYSTUS DECIPIENS ENRICHED WITH FUCOXANTHIN

PROBLEM TO BE SOLVED: To provide a method of easily producing a food material containing fucoxanthin in a stable state at a sufficient concentration for use in a health promoting food product or the like or in a raw material for extracting fucoxanthin therefrom. SOLUTION: The method of producing dried powder comprising fucoxanthin at a high concentration is characterized by drying Nemacystus Decipiens obtained by culturing the same in a culture medium into which at least nitrogen and phosphorus are added, under a condition of an effective photon flux density for photosynthesis of 450μmol×m-2×s-1or lower by way of freeze drying, spray drying or ventilation drying.
