<P>PROBLEM TO BE SOLVED: To provide a coffee extract and food or drink, which have reduced contents of caffeine and monocaffeoylquinic acids, have increased amounts of physiologically active components and are excellent in water solubility, and an oral composition for ameliorating hyperglycemia and an oral composition for enhancing adipocyte differentiation, each comprising the coffee extract as an active ingredient. <P>SOLUTION: A method for producing the water-soluble coffee extract comprises: a step of extracting a pulverized product of roasted coffee beans with hot water, thereby obtaining a hot-water extract; a step of bringing the extract obtained in the previous step into contact with a synthetic adsorbent; a subsequent step of separating and recovering a solution containing a fraction not adsorbed to the synthetic adsorbent; a subsequent step of washing the synthetic adsorbent with 20-40% water-containing organic solvent; a subsequent step of eluting components adsorbed to the synthetic adsorbent with 50-100% water-containing organic solvent and collecting an eluent; and a step of mixing the non-adsorbed fraction solution with the eluent. <P>COPYRIGHT: (C)2011,JPO&INPIT |
